Recipe of the Day - Cheesy Spaghetti Squash with Pesto

I know a lot of you are probably missing some pasta about now, I know I am. Spaghetti Squash is a pretty decent alternative. This sounds very tasty!

I actually prefer spaghetti squash to real pasta.  I just harvested six of them from my garden, cooked them up, vacuum sealed a ton of individual sized & family sized portions, and froze them.  Once I'm post-op and on real food it'll be ready for me to thoroughly enjoy.

I've used it in the past in lots of ways and is always to die for:

  • Lightly stir fried bell peppers, mushroom, onions, and wilted spinach with marinara. Sometimes I also make lean chicken or lean beef meatballs to go with this.
  • Layer it with the veggies above, lean chicken, reduced fat cheese, marinara to make a kind of lasagna.

I really like it with marinara, but this recipe looks really good. I'm going to have to save it to my recipe box!

P.S. Thanks for sharing the link to the recipe blog.  Looks like there could be some great recipes on there for when I'm post-op.
