Recipe of the Day - Cheesy Spaghetti Squash with Pesto

I actually prefer spaghetti squash to real pasta. I just harvested six of them from my garden, cooked them up, vacuum sealed a ton of individual sized & family sized portions, and froze them. Once I'm post-op and on real food it'll be ready for me to thoroughly enjoy.
I've used it in the past in lots of ways and is always to die for:
- Lightly stir fried bell peppers, mushroom, onions, and wilted spinach with marinara. Sometimes I also make lean chicken or lean beef meatballs to go with this.
- Layer it with the veggies above, lean chicken, reduced fat cheese, marinara to make a kind of lasagna.
I really like it with marinara, but this recipe looks really good. I'm going to have to save it to my recipe box!
