First, yes it would work without the eggs it would just be a bit runny but would taste just as good.
Second, are you alergic to the whole egg or just the whites or just the yolks? Yolks and whites are very different, what about eggs are you alergic to and are you also alergic to chicken?
If you are just alergic to one part of the egg you could just double up on the part you are not alergic to and get a similar result to the pic.
I don't know, and honestly, I'm afraid to try just the whites. I've had that suggested, but I get really sick, and experience severe, debilitating pain when I eat them. This reaction started in my 20's and it took me like 4 years to figure out it was eggs, then I narrowed it down to these other things over the years.
The same thing happens when I eat bananas, avocados, and pineapple. :(
I wonder if there is something common among all of those that you are actually allergic to some sort of fatty acid perhaps. Off the top of my head I can't think of anything.
You might be able to test this without actually eating them. Try rubbing a little of each on two different parts of say the skin on the bottom parts of your arms that are more sensitive than exposed skin and see if you have a reaction. I would to both just to see what happens. Just a thought because I am curios not because I want you to eat anything that makes you ill.
It hasn't been an external reaction ever, only if I eat it, but it might be worth a try.
I did a search on it a long time ago, and there are others who have the same reaction to the same group of foods (not always all of them, and sometimes it includes mushrooms, and mangos). I am SUPER glad these don't bother me. I'd cry.
This sounds really yummy...but the nutritional analysis makes me worried to try it...582 calories and 50 g of fat!
I might try to change up the heavy cream and whole milk mozzerella to bring the fat and calories down. Also switching from Italian pork sausage to a lean turkey sausage and regular pepperoni to turkey pepperoni.
I'll let you know how it is in a "lighter" version.

Couple things to keep in mind- are you going to eat 1/6th of the casserole? (I really doubt it).. and the fat is a good thing, esp if you are low-carbing. Going low fat and esp not getting enough sodium leads to constipation and the spinny-weak passing out feeling.. Up both, and things right themselves pretty fast. If you are not low-carb, yes- you really can't do high fat.
