Favorite Low Carb/VSG Friendly Meals?

  Crack Slaw - Low Carb By Sooz Cooks on August 10, 2010     Photo by medmassage   Prep Time: 5 minsTotal Time: 25 minsServings: 4   About This Recipe "This recipe supposedly earned its name because it is SO addictive and I agree! I absolutely love this stuff. You can just eat it with a fork or make lettuce wraps out of the mix. Simple and DELICIOUS! I say 4 servings here but really, my husband and I could polish off the batch with no problem!"   Ingredients 1 lb ground beef salt and pepper 2 tablespoons toasted sesame oil 2 garlic cloves, minced 3 green onions, sliced 14 ounces coleslaw mix ( if you don't want the carrots use the angel hair cole slaw or just shred up a head of cabbage) 2 tablespoons low sodium soy sauce 1/2 teaspoon sriracha sauce ( this will be pretty mild so add to taste or you can use pepper flakes to taste) 1 (1 g) Splenda quick pack 1/2 teaspoon ginger paste ( you could also use 1/2 teaspoon fresh minced ginger or ground ginger) 1 teaspoon white vinegar ( any kind really) sriracha sauce ( to garnish) Directions Brown ground beef and season with salt and pepper to taste. Remove from pan and set aside. Heat up sesame oil and sauté garlic, onions, and slaw in sesame oil until cabbage cooked to desired tenderness. Stir in the soy sauce, Sriracha sauce, Splenda, ginger and vinegar. Add back in hamburger. Mix well and serve! I use ground chicken or ground turkey (beef bloats me ) plus it lowers the calories quite a bit.  I put the recipe in MFP with the ground chicken and the calories are 246 instead of 339.  even my fiance said it was yummy!

  I'm not where I want to be, but I am closer than I was yesterday!

Hubby and I decided to drop chicken and ground turkey for a month (we find they sit heavy and don't eat any other meats at all) so I'm going to try this with Veggie Ground Round.

fried egg topped with cheddar cheese and sauteed spinach inside a folded over piece of deli ham

veggie salad with any kind of meat, hardboiled egg, cheese and sunflower seeds with newmans own asian sesame ginger dressing

chicken or tuna salad, egg salad made with olive oil mayo

string cheese and dilly beans  rolled up in smoked turkey

Well, I feel really boring now. I pretty much just make meat or fish and eat it. But I guess these are mine at the moment...

1. seared jumbo sea scallops

2. baked swai (baked with lemon, seasonings, a splash of wine) and roasted broccoli

3. shrimp ****tail with lemon

4. cooked chicken with a little pesto and parmesan cheese

5. roasted pork tenderloin (as long as I don't overcook it, haha, because then it drops out of the favorites list)
