New Recipe I Created

So now that I am over my little hissy fit I wanted to tell you all about this quick and easy recipe I made last night. I needed something to take in my lunch this week. I didn't cook on Sunday like I normally do and my wife and kids went out to dinner last night. I did not want to wing it this week because that is one of the steps toward eating poorly. So I ran up to the grocery store. I had 2 criteria. I had to be able to get everything mostly ready to use and it needed to have lots of veggies because I have been a bit short on veggies. So this is what I did:

16 oz Ready to Eat Grilled Chicken (probably high in sodium but I will live), chopped it up

Celery Hearts - had to dice them up

1/2 16oz Bag of Coleslaw mix

1 Small (8 oz maybe) of Broccoli Slaw Mix

1/2 bottle of ginger dressing

1/4 cup of slivered almonds

1/4 cup of edamame

Mix it all into a bowl and and dish up into small containers. I set this as 4 servings but I think I will end up splitting it across my lunch and a snack.

Also the ginger dressing was not low carb, if you use Annies ****ake Vignagrette you will get a similar flavor with fewer carbs.

Even the way I have it now it is around 296 calories, 12 carbs (4 fiber), 34g of protein, 13g of fat (all good fats) - this if for 2 whole cups, so if you are early out cut this in half.  EDIT: I could only eat half of what I brought so about 1 cup.

This was just an off the cuff go at this. If I were going to tweak anything or start cutting anything out, I would swap out the dressing, and the coleslaw mix and broccoli slaw mix I used had carrots in them so that is some carbs too, if you get just the cabbage or cut it up yourself you could lower the carb count to probably around 5 or 6 and if you made the dressing yourself you could use olive oil and increase healthy fats. 

I didn't think about this yesterday but I might also try adding in some hemp hearts and/or quinoa. Chick peas might also be good with this.

I may try variations on this because you can flavor this just about any way. Maybe buffalo chicken with blue cheese dressing, maybe ranch with chipotle chicken. Maybe Italian with some ground beef. Ham and (well nothing coming to me at the moment), turkey and ranch, tuna and lime/garlic or something.

It was very good. I was right though, I loaded up my container but I could only eat half and I feel miserably full. So cut the portion size down. But it was so good I may eat the rest as my snack today.

oh, i do love a good ginger dressing slaw with nuts.  i'm going to be thinking about this all day now.

Bagged broccoli slaw is one of my favorites! I tried explaining it to a friend the other day but they thought it sounded weird.
