How did I miss this, I'm always checking Eggface's blog.  They look really great - I'd probably add some grated Parmesan to the mix, and sprinkle on top too.

Would it be weird to replace the mushroom with an eggplant or zucchini? I unfortunately despise mushrooms but this sounds so yummy.

I very rarely follow a recipe verbatim. I tend to use recipe as a concept and a guide for ratios, cooking time, temperature, etc. everything about a recipe is open to interpretation. Except for baking recipes if I mess with it I will mess it up. 

so by all means try it. I think zucchini would cook more like the mushroom.

I do the same! Baking is deinitely harder so i dont really bake a lot. I like to experiment with cooking, since its easier and always turns out yummy. Thanks for the tip!
