This is what I made last night
I wanted something different, something healthy so I set out to make that but ended up with a new Taco Casserole:
1 lb to Ground Turkey Breast
1 can of Black Beans (drained but not rinsed)
1 can of Rotelle (hot)
1/2 cup of pepitas
2 packages of Taco Seasoning
3 Cups of chopped kale
2 cups of low fat jack cheese
Brown the meat, throw in the kale toward the middle of the browning to wilt it down. Once its all done, add in the beans, rotelle, pepitas, and taco seasoning (follow directions on the package) once the taco seasoning cooks down, turn off the heat and cover with cheese and put a lid on it for a few mins until cheese is melted. Serve or put into containers for the week.
