Casein Ice Cream Recipe

One of the best proteins you can drink in the evenings is Casein, but it is very thick and usually gives me a bit of a stomach ache, but because it is a slow digesting protein, it is good for taking before bed time so it can feed your muscles while you sleep.

I make an ice cream out of it. It is low carb, sugar free, and tastes pretty freaking good. You can add more frozen fruit to get it closer to the consistency of actual ice cream the way I make it is slightly softer than soft serve but serves its purpose quite well. Here is what I do:

1 Cup Unsweetened Vanilla Almond Milk

1 Scoop of Casein Protein Powder (any protein powder would work just as well), I use vanilla but again, any flavor would work

1 to 2 tbsp of Chia Seeds (totally optional, I just started adding these)

1/2 to 1 cup of frozen berries (I switch between strawberries and blueberries as they are very low glycemic, strawberries are best for low carb)

1 packet of stevia or 2-3 drops of liquid vanilla stevia (I like the liquid better but both work)

Add all ingredients to blender (I use a magic bullet) and blend until you get the consistency of ice cream, about 1 min. If it is still too loose, add some more frozen fruit.

If you add a frozen banana or even a fresh banana it will make this creamier but you will no longer be low carb.

this sounds like a good idea for me to incorporate more protein and not need an ice cream maker!  I live in an apartment so having an ice cream maker and nowhere to put it makes Danielle an unhappy girl...but I do have a blender!

is Whey protein no good at nighttime?  That's all I have right now but maybe I should invest in Casein or a different type?

Funny I just responded to your whatchya eatin' post and said to come check this out.

Whey protein is fine at night but depending on what kind of whey it is, it digests pretty fast whereas casein protein digests very slowly and it feeds your muscles during your sleep for about 5 or 6 hours.

If you are using a whey isolate it digests very quickly, a whey blend will be a bit slower, a whey concentrate will be even slower than that and a protein blend (which usually has whey, milk, and casein) is even slower.

There is casein in milk, cottage cheese and I think greek yogurt, you could mix some of that into your shake to and make it digest a little longer. No matter what you are going to get some benefit from it.

BTW Casein is pretty inexpensive. I think its like $23 for the same size as my $36 jug of whey isolate. A word of warning though if you normally use 8 oz to mix whey, use 12 (or more after some trial and error) to mix the casein, its quite a bit thicker and it does feel a bit uncomfortable at first, some people do not tolerate it very well, so maybe a couple samples first might not be a bad idea.

This sounds so amazing I can not wait to try it!

Is there a reason you use frozen berries over fresh??

That's what turns it into an ice cream like substance. Otherwise it would just be a fruity shake.
