Your tastes and sense of smell definitely may change.  Mine has significantly.  I have always had a freakish sense of smell, which drives people kind of nutty after a while, but now its like my nose is directly connected to my gag reflex, and anything that smells remotely strange, or even just too strong, makes me sick to my stomach.  I actually carry around a cloth handkerchief with spearmint oil on it ****ep it in a ziploc in my bag) and if a smell is too overwhelming I have to sniff it.  The last time I used it was at the movies because the popcorn smell was bugging me.  As for proteins, I have yet to find one that doesn't smell or taste funny.  Some of them are worse than others though, for sure.  My friend at work uses a vanilla powder that is about the best I've tried.  I need to ask him what it is.  Out of surgery, I thought skim milk with carnation instant breakfast was the most tolerable source of protein.

Hi. I tested about 15 different ones before surgery and wound up hating them all. I can now use Whey gormet ice cream flavors. The one I like is vanila royale. But what really saved me was this. My husband God Bless him took 16 ounces of chicken broth and put in 3 cans of drained canned chicken. He put it all into a blender and blended it. I sipped on it all day. It gave me 75 grams of protein and 16 ounces of my fluids. It was a life saver. Try it.

I'd say keep trying different powders. I HATED Unjury. I know a lot of people on OH swear by it but I thought it was nasty as hell. I kept trying different places that sold samples as well as trying lots of full sizes things. I swear I tried a million drinks and finally found some that I can tolerate!! I don't use them as much now but I still do once in a while. Bariatric Eating sells samples. I use the ready to drink kind most of the time, but there are a few powders that are good too.
