Well I started this thread last week and we had some great recipes come out of it....I know I get so bored with the normal blah blah and if nothing else this atleast made me try a few new things so I could post something here...I know My DH liked it lol 

This week is going to be tuff I am a busy busy girl and my Daughter goes to prom on sat night and man what a chore this is turning out to be. Can I tell you how proud of her I am? She is really turning into such a wonderful young lady... anyway I'm going to need some quick easy and healthy recipes.....ANY Ideas?

Heres mine

A frittata is an Italian dish and is basically an omelet that is started on the stove and then baked open faced in the oven. The beauty of a frittata is its versatility and ease of preparation. Start with almost any combination of vegetables, cooked meat, cheese and seasonings and you will have a delicious meal with a very different flavor every time. You can also vary the texture of your frittata by changing the amount of milk used in the recipe. For instance, the less milk you add the more omelet-like the texture. The more milk  will give you a more quiche-like texture.

1 tsp olive oil      2  cups fully cooked and shredded  chicken or beef I use left over’s or you could use ham              1/4 cup green bell peppers              ¼ cup red bell peppers       1 tomato chopped or ½ small can diced tomatoes drained and dried  8 eggs 1 cup milk 1.5 cups grated cheese (cheddar, Monterey jack combo)  1 small can chopped green chilies      ¼ tsp cayenne pepper  (if you like the spice)  you can use taco seasoning too..... lots of flavor no spice 1 tsp fresh ground black pepper ½ tsp salt Directions: 1.    Heat oil  in non stick skillet   2.     Add peppers sauté until tender ( I have used canned roasted red peppers when I didn’t have fresh)  3.    Add chicken or beef and tomatoes 4.    Whisk eggs, milk, green chilies and seasonings until well blended.  5.    Pour egg mixture over the meat 6.    Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top.  7.    Bake in 350 oven for approx. 10 to 15 minutes or until set (knife inserted in center comes out clean). top will be somehwhat browned 8.    Cut into wedges and serve with sour cream and salsa.

Hint: sometimes I cook at too high a temp in my skillet and I burn the bottom….It doesn't taste good that way lol

I did almost this exact same recipe on Monday except I did it with left over crawfish from a boil we had during the weekend. Mmmmmmm MMmmmmm MMMmmmm!  A great protein rich supper!

Shelly's Summer Squash Casserole 3 cups sliced yellow summer squash or zucchini (or combo) 1/2 yellow onion, chopped 1 green onion, chopped (1 tablespoon chives) 1/4 cup sour cream 2 tablespoon melted butter, divided use 1 egg, beaten 1 tsp. Italian Seasoning 4 tablespoons shredded Italian Blend cheese (mozzarella, fontina, etc.) kosher salt freshly ground pepper 2 Tablespoons grated Parmesan 2 Tablespoons Italian dry bread crumbs Saute the squash and onion till it just gets a little color and slightly tender. Add green onions. Combine sour cream, 1 T of the melted butter, cheese, egg, salt and seasonings. Off the heat. Fold into cooked squash. Turn into buttered casserole. Combine other Tablespoon of melted butter, bread crumbs and Parmesan. Sprinkle over top of casserole. Bake at 350 degrees about 25 - 30 minutes or until browned and bubbly.

Mmmm, I love omelets.  Actually I plan to make denver omelets for dinner this week. I eat them a lot since surgery, but I've never turned them in to frittatas.  Hmm, quick easy recipes?  Quesadillas or tortilla pizzas are always good.  I have a post in my blog with lots of suggestions for quesadillas!  http://doktorchik.blogspot.com/2008/03/recipe-post-3-healthy-quesadillas-not.html

Tortilla pizza...MMMMMMMM I love to use the low carb wraps for pizza I haven't really made them since before my surgery..Maybe I will try them this week....... Thanks
