Recipes - UPDATED

I promise I will post the bread recipes tomorrow morning.

The Green Bean Chicken turned out great, I ended up combining 2 recipes to get the look and taste I wanted. Here's the recipe I came up with -

Green Bean Chicken

2 boneless skinless chicken breasts cut into 1 inches pieces
lots of fresh green beans snapped and cleaned, cut into 1 inches pieces
1 tablespoon black bean garlic paste, mixed with 3 tablespoon water
1/2 teaspoon crushed red pepper, less if you don't like spicy 
1 teaspoon sesame oil
sesame seeds
1 teaspoon cornstarch

Heat wok and place 1 tablespoon oil in it. Cook chicken until browned. Add in green beans, black bean garlic paste, sesame oil and red pepper flakes. Cover and let steam for 5-6 minutes. 

Mix cornstarch with a bit of water and add into green beans to thicken. Sprinkle with sesame seeds and serve.

I served this with Mock Fried Rice ... yummy!

Disclaimer - these recipes may not be the healthiest, but I've revamped them to be much better than they were originally. I do not bake for us (home) at all, I always bake for others or family. If I kept this stuff at home it would be gone in no time and I'd be weighing a lot more. ;)

Pumpkin Bread
~~~~~~~~~~~~~

3 c. whole wheat flour
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
1/2 cup canola oil
3/4 cup unsweetened applesauce
2 cups Splenda
2 cups pumpkin
4 eggs (or egg beaters to equal)
1/2 tsp. cloves
chopped nuts or raisins optional

Mix all ingredients together. Pour into two loaf pans that have been sprayed with Pam. Bake at 350 degrees for 1 hour.


Zucchini Bread
~~~~~~~~~~~~

3 eggs, beaten (or eggbeaters to equal)
1 cup unsweetented applesauce
2 cups Splenda
3 tsp. vanilla
2 cups whole wheat flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1/4 tsp. baking powder
2 cups grated zucchini
1/2 cup chopped nuts if desired

Mix first four ingredients in a large bowl. Add flour, salt, soda, cinnamon, and baking powder. Blend thoroughly. Add zucchini and nuts. Stir until well blended. Pour into greased and floured pans. Bake 350 degrees for one hour. Cool on rake 10 minutes before turning out.



Banana Nut Bread

1 1/3 cups whole wheat flour
1/2 cup Splenda
1 tsp. baking powder
1/2 tsp. baking soda
1 pinch salt
1 1/4 cups mashed bananas
1 tablespoon canola oil
1/3 cup reduced fat buttermilk (I add 1 teaspoon vinegar to NF milk to make this)
2 tsp. vanilla
1/4 cup chopped walnuts (optional)

Preheat oven to 350. Spray a 9x5 inch loaf pan with Pam, set aside. Blend dry ingredients in a large mixing bowl, set aside. Add oil, buttermilk and vanilla to the mashed bananas. Mix well. Pour banana mixture into dry ingredients. Stir until just mixed. Add nuts, stir until just mixed.
Pour batter into loaf pan. Bake for 45-55 minutes.

Thank you, Jan!  These sound really tasty!  I feel an urge to bake coming on, so I could bake these and my sister could take them to work and share with her co-workers.  These recipes also sound good for holiday gifts.

Kix - Baking is and always has been something I love to do. For me it's a stress relief, like gardening. I give 95% of what I bake away, hubby takes it to work, family stops by for it, and I've even baked cookies for our local Firefighters. Once a month now I cook brunch for the seniors at church, so most of this will be going in the freezer for them .

I do a lot of holiday gift baking, and these are perfect!

Your welcome. I decided to start making things healthier for the ones I love too. Figure if I'm going to be around a bit longer I might as well  keep those I love happy and healthy!
