Good Thanksgiving Ideas from Virginia Board
This will be the first major holiday since Doc Williams and I had our WLS. So, I am looking for good holiday meal ideas and there were three really good sounding ones on the Virginia board that I thought I would share... and if anyone has any WLS friendly holiday ideas, let me know!!!!
Cranberries
Buy a package of Ocean Spray cranberries and follow the instructions on the package as follows: 1 cup cold water, 1 package whole fresh cranberries, 1 cup splenda. Boil for 5 minutes until the berries pop and then sprinkled one package of unflavored gelatin over it, take off the stove and put in a contain and chill over night.
Low Carb Low Sugar Pumpkin Pie
1 1/2 cup fresh or canned pumpkin
3 eggs
3/4 cup splenda
1/2 tsp salt
1 tsp cinnamon
1 3/4 tsp pumpkin pie spice
3/4 cup cream
1. Mix all ingredients together.
2. Pour into a well sprayed pie pan.
3. Bake at 350 degrees for 30-40 minutes.
I made this yesterday.
This pie will puff up while baking. Once the center puffs, it is probably done. After it rests... it will fall and will be a very shallow pie. But it is mighty tasty. Especially with a dash of Cool Whip Light on top.
I don't have the caloric information for it but it is low on the carb side and it is very quick to put together.
I might try doubling the recipe and pouring it over a pre-baked nut crust in a cheesecake pan.
Low-carb corn pudding
1 cup cream
1 tablespoon vinegar
2 eggs
1/4 cup corn oil
1 cup whole kernel corn (no sugar-canned)
1 tablespoon baking powder
1 cup almond flour
1/4 cup corn meal
2 tablespoons Maltitol (or sweetener of choice)
1/2 teaspoon salt
1 cup shredded cheddar cheese
Makes 8 Servings
Preheat oven 350°F. Add the vinegar to the cream and set aside.
Combine all dry ingredients (almond flour, baking powder, corn meal, sweetener and salt). Mix corn, cream, eggs and oil, then blend with dry ingredients. Pour into a baking dish that has been prepared with spray oil and bake for 20 minutes. Remove from oven to add cheese topping and return to oven for 10-12 minutes or until the cheese is melted and the center is firm. Total carbs = 8 servings = 6 ECC each
Total carbs = 48
ECC Per serving = 6

Great recipes...I can't use them myself this year cause I'll be in the hospital eating broth and jello. I want to tell you when I first read the title of your post I kinda got scared! I knew I didn't have any good Thanksgiving ideas. You see, it really is rough when your name is the name of 2 states!! I thought I was being put on the spot

I have one I dont know how you all will like it but my hubby and I really enjoyed it last night. I took a whole acron squash and washed it and cut it in half. Scrapped all the seeds and icky stuff out of it. I peirced it iwth a small knife in several places (meaty side) sprinkled cininimon all over it. Used that splenda brown sugar 2 tbs and 1 tbs butter. Put on a cookie sheet (I lined it with foil so it would be easy to clean up) and up it in to bake for 45 minutes @ 350. It was wonderful I counted all the carbs and for 1/2 of a squa**** was only 12 carbs. YUMMY!!!!! Plus it made the whole house smell good too. lol

Thanksgiving is my last hurrah before the liquid diet kicks off. I'm having a little bit of everything (In my own defense, even when I indulge, I do it in the framework of 6 protein sources a day, smaller portions, etc.). I'm also having pie. I make very good pie, which I will refrain from describing.
But on November 30th, I switch to whey shakes and vitamins only. Which is probably what I'll be having for Christmas dinner, so I'm not going to feel a lot of guilt over a little turkey (and potatoes, stuffing, sweet potatoes, gravy, pie, etc.).
Next year, I will have to try that pumpkin pie recipe. Spenda seems like good stuff. Normally, I loathe artificial sweetner. I had some Splenda in my coffee a couple of weeks ago (the last cup of coffee -- I'm off caffeine now) and I couldn't tell it was the fake stuff. Very nice.
