Hi everyone, I'm trying to add more fiber to my diet ... I don't eat bread of any sort, I don't eat rice or pasta (nothing "white or white derivative" is the rule with my dietitician), I don't tolerate salad well although I can eat raw carrots once in a while. So I've been trying to find other things I can tolerate that might fall into the parameters of my WLS program and still provide some extra fiber. That said, I'm wondering about HOMINY. Yes, it's corn and can be "white" (lol), but there's always the YELLOW kind! Reading the label, it has 0 fats, 0 transfats, 0 cholesterol, 11% carbs, 0 sugars, 1 protein, 60 cal per serving with no calories from fat. Sodium seems abit high, though. Growing up, my dad always scrambled eggs in hominy (I know, but don't knock it til you've tried it ... it's good) ... so I'm wondering about doing that for breakfast, substituting "I can't believe it's not butter" for the butter he used. Trouble is, I'm almost scared of the consistency, although at 8 months post-op, chances of a blockage are slimmer than earlier on. So, does anyone eat hominy? I'm curious. Myra

Myra I'm sorry I can't answer the question for you but I can't believe I finally found someone else who likes Hominy!! When I was little my grandmother and my mother would make us Hominy and Scrapple for breakfast..YUMMIIIEEE!! I can't eat Scrapple anymore I can't stand to look at the ingredients but when I can I love to eat Hominy. My family is from Maryland and that's the only place I've found the kind my grandmother makes, they don't sell it in Ga or at least not the kind I like. Sorry to ramble on but your post brought back a FLOOD of good memories...THANKS> Jamie

No it's Scrapple and the name pretty much says it all. It is made from pig parts. Just typing that out made my stomach cringe..I used to LOVE it and I would gobble up my portion and beg for more....OH LORD help me!! It comes in a grey block about the size of a cassette tape but a lot thicker. You slice it and it is the exact size of a cassette tape and then you fry it. I always like mine crispy but it depends on how thick you slice it..some people (my dad) like theirs mushy in the middle. From the descriptions I just found, it is made up of the parts of the pig that aren't used for other things, cornmeal, seasonings and such. Some people eat theirs with ketchup it says but we always ate ours with hominy and toast and I liked to put syrup on my scrample as well. It's really very tasty but you have to get over the ingredients and as an adult I just can't seem to. It is a creation of the PA Dutch and it's very popular in the Mid-Atlantic states..Rappa scrapple I think is what we ate. You can do a search and find out all kinds of neat info.... I know this is probably TMI but I was intrigued reading the info myself.. Take care, Jamie

OMG! I thought I was the only person who loves scrapple! I always thought it was a Philly thing. I know it's made for piggie parts, but OMG... nice and crispy and mmm-mmm-mmmm!! No more scrapple once I am post op! Huggs, Ruth

Myra, I like hominy but haven't eatten it in decades! I would think it would be fine as long as you watch the carbs you are taking in. Myself, I am 3 1/2 months post-op and can eat most anything except refined sugar and lots of fat. As far as veggies... I have done them all since a few weeks out. Good luck Patti

Hi Myra, I can tell you that one of my friends who is post op as well does eat bread but she gets the kind that is sliced very very thin. Not sure what brand, but I can tell you that she limits herself to only a half of a sandwhich. Hope that this helps, Monica F.

Myra, I'm almost 6 months out and have eaten hominy, corn and all vegetables. I do well with everything, except lettuce. It doesn't digest well. I also do not do well with soft breads. Hard crackers are no problem, so I eat Wasa bread on occassion. It is a swedish hardbread and has fiber. I have to eat slow and chew well and nothing gets stuck. But, I still take 2 tablespoons of benefiber every day in my hot drink, just to help push up the fiber totals. I like it, because it is tasteless and dissolves clear and is not thick. I'm a firm believer that everyone should have 30 grams of fiber a day...which isn't easy when you are a WLS patient. Especially, when you are first out! Good luck. Lori 384/274/170

Thanks for the answers, everyone ... Jamie ... if you like hominy, then try cooking it down (Missouri-talk for cook it til the juice has evaporated), then drop in eggs and scramble the whole thing with salt and pepper and whatever else you might want to (or be able to tolerate) throw in ... in the past I've added chopped green pepper (can't deal with that now), bacon bits, and cheddar. Daddy used to just cook it down and scramble in the eggs with salt and pepper and a little butter. Yep, memory lane there. I've also added hominy into a standard egg-sausage-cheese casserole (you know the kind I mean). Makes a good "stretcher" when there's several people to feed ... like office "bring a dish" gatherings etc. Just don't say the word hominy or not many people will eat it ... wait til it's all eaten up and then tell them. Ruth and Jamie ... never had scrapple growing up ... had brains & eggs when I was a child (no way now!), and Daddy made grits on a regular basis (yummy!), and then fried the left-over grits for a supper dish. Lori: I'm getting the Benefiber tomorrow then ... cause if it's tasteless I can deal with it. Thanks!!! ((hugs all))) Myra
