TURKEY CUTLETS FRANCESE 1/2 cup grated parmesan cheese 1/4 cup dried parsley flakes 1 cup egg substitute 1/4 cup skim milk 1 pound turkey cutlets,sliced thin olive oil cooking spray 1/2 cup white wine 2 tablespoons concentrated chicken broth On a flat plate, mix parmesan cheese and parsley. In a baking dish or platter with sides, mix eggs and milk. Dip cutlets into the egg, then into cheese mixture then back into egg. Coat a non stick skillet with cooking spray and heat until hot but not smoking. Saute' cutlets for 3 minutes on each side until brown. Remove to a plate and keep warm. Reduce heat to low, pour wine into pan, and simmer stirring to scrape up and brown bits. Add concentrated chicken broth and continue simmering and stirring for about 2 more minutes until sauce reduces slightly. Makes 4 servings. Weeks: 4+ Serve 2-4 ounces cooked turkey topped with sauce Calories: 255.08, Protein: 37.87g, Fat: 6.47g, Carbs: 6.53g, Cholesterol: 76.35mg, Fiber: 0.30g, Sodium:838.88mg *You could use low sodium or homemade broth and probably cut down on the sodium.* ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ STRAWBERRY RICOTTA WHIP 21/2 cups fresh strawberries quartered 1/2 cup fat free ricotta cheese 1/2 cup plain fat free yogurt 1/2 teaspoon grated orange peel (zest) 1/2 teaspoon vanilla extract 4 packets of artificial sweenter 6 tablespoons egg white substitute 1/2 teaspoon cream of tartar Combine strawberries, ricotta, yogurt, orange zest, vanilla, and sweetner in the container of a food processor and process until smooth. In a medium bowl, whip egg whites and cream of tartar until stiff peaks form. Gently fold beaten egg whites into strawberry mixture. Pour into 4 small dessert dishes and chill.
