I really need your help.... I am going to my parenmts place for Christmas this year, and as some of you know I am having to lose 30 pounds in 3 months, and I am now on week 2. I have lost 13 pounds so far and am DREADING Christmas. I need to make some snacky type things AND whatever else I can think of to take over there with me so when everyone else is eating cookies and cake and all of the good stuff, I'll have something sugar free, possibly fat free, and very low in calories..... I am getting sick of the straight s.f f.f pudding or jello, but using these in a recipe would be fine. DOES ANYONE HAVE ANY RECIPES? CAN YOU HELP? Thanks!!! Carrie

Carrie I got this recipe from here around Thanksgiving. Made these this morning, came out absolutely wonderful. I was able to find the DaVinci Syrups at Super Wal Mart..I love that place! Mix: 1 cup almond flour 1 tsp cinnamon 1/2 tsp ground cloves (or 2 tsp Allspice instead of cinn or cloves) 1/4 tsp salt 1/2 tsp baking powder 1/2 tsp baking soda 24pks splenda (OR 1/2 cup davinci SF syrup and 6pks of Splenda) 3 tblsp chopped walnuts Then mix: 1 cup mashed pumpkin 2 eggs 1/2 cup oil Mix dry into wet and pour into sprayed 9x13 inch pan. Bake 350 for 30-40 min. Let cool then frost. Really good next day!!! If they last that long!!! Cream Cheese Walnut Frosting 4 oz softened cream cheese 2 tbsp softened butter 2 tbsp cream 1 tsp maple or walnut extract 1 tsp vanilla extract (will also work with 2 tsp vanilla instead of the maple or walnut) 6 pks splenda OR SF vanilla syrup to desired taste and consistancy. Mix all together till smooth then add 3 tbl chopped walnuts and spread on bars! 18 bars at roughly 3.5 carbs each and 2.5 if you use the Davinci and splenda. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ This morning I mixed in my mini-processor 1/2 cp of cottage cheese, 1 scoop of vanilla unjury protien powder, 1/4 cup of frozen pineapple, 1 pkg. splenda, 1 tlbsp vanilla pudding mix and blended until creamy, placed it in the fridge for a little over an hour while I went to my spin class. Let me tell you it was wonderful, like a parfait! I thought I would share ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Plus we have a candy house here local. I went there and got some sugarfree fudge. that had approx 3 cards per serving. And man did it melt in my mouth. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Wal Mart sells sugar free cookies in their bakery, snack food wise I always keep on hand things like Slim Jims, Pork Skins, Fresh Veggies, Flavor water, . I also found some flour shell at wal mart that have only 4 net carbs per shell. I butter and garlic them grill them and add cheese sort of like a grilled cheese sandwich. And top them with salsa and sour cream. So far by me counting my carb intake. I have lost over 45 lbs in 2 months. Good luck I hope this info is of some help to you!!! Merry Christmas Melissa

Carrie, I would make a nice fresh fruit salad with plain yogurt sweetened with splenda. That will be nice and won't blow the diet. Hang in there, baby! It is going to be so worth it. Lori 384/268.5/170
