Healthy Cookie Recipe!

I was jonesing for some cookies yesterday...wanting to be healthy, too... had some rolled oats on hand...found this on the Internet...YUM... if you like pumpkin, and if you like oatmeal.. it's a winner!

Low Fat Pumpkin Oatmeal Cookies

These low-fat pumpkin cookies are great for the fall holidays and make a healthy after-school snack for the kids too. Try them. You won't believe how good they are until you do!
Ingredients:
1 c. pumpkin
2 egg whites, whipped
1 c. brown sugar, packed (I used Splenda's brown sugar....halve it, if you do, too)
1 1/2 c. all-purpose flour (I used whole wheat flour)
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
3 c. rolled oats
1 c. raisins (optional, of course!)
Directions:
Spray baking sheet with cooking spray. In a large bowl combine pumpkin and egg whites. In a separate bowl combine sugar, flour, baking soda, cinnamon, nutmeg, cloves, oats, and raisins. (Batter will be very dry at first.) Mix ingredients together just until moistened.
Drop cookies by tablespoonfuls onto prepared baking sheet, 2" apart. You can leave the cookies in the shape of a ball (the baked cookie will still be a ball) or flatten them out with the bottom of a glass before baking.
Bake at 350 degrees for 15 minutes.

It is so funny to me how different surgeons plans are! I'm not ever suppose to have pasta or rice again. I don't plan on ever eating rice and have only had 1 or 2 bites of pasta occassionally. Mashed potatoes I did pretty early out but only with lots of cheese added for protein. I don't really do breads, but I do low carb tortillas. Sometimes I do the crust of breads. Like at Souplantation I get the sourdough ends and peel the bread out of it and just butter the crust. It is soooo yummy! I really haven't done much corn, it is kind of hard to chew well.
I love fortune cookies!!! I don't think they are too too bad for us, lower in sugars than most things, but does take the sweet tooth away! And I love moist and heavy brownies! lol brownies have always been one of my favorites and I'd love to come up with a legal brownie. Eggface does a pretty good version that I love! She made them for me for my birthday!
