I've Found The Ultimate DSer Food: Fried Cheese

Oh my God, I have a new obsession.   Costco sells a queso blanco (a Mexican & South American mild white cheese, also called queso fresco) that you can slice and fry.  Low heat, some olive oil in the pan, fry it on both sides for a couple of minutes until it's golden brown.  SO GOOD.  It tastes a little like a grilled cheese sandwhich without the bread.  Total heaven, no carbs! 

(Some types of queso blanco/fresco are more meltable and wouldn't fry as well, which is why I mentioned that I got mine at Costco - it's perfect.  And cheap.)

I used to eat this studd ages ago when I was on Atkins. I wonder if Wal-Mart sells it.

Can you remember the brand name?

I have seen several brands of it at the stores around me also. I can imagine it would be great.

I made some jalepeno poppers in the oven the other day and some of the cheese (Cabot Montery pepper jack, and Cabot Cheddar habenero) fell alongside on the foil. they melted crispy brown and since i had used non stick spray they peeled right up.  OMG they were crispy and wonderful!! I think someone posted a long time ago about making the melted cheese that way.

can you check what the brand is? It sounds heavenly!!

Yeah, I want to make those cheese crisp things too.  I think you grate cheese, dump it in little piles, and bake it.  Cheese is totally my go-to food and I'm getting sick of my regular stuff, not to mention annoyed that all the really fabulous cheese is, like, $12 a pound or more. 

The brand I used is Queseria Caribe.  It's almost  like a moister, mild feta - salty, rather wet, and firm.  Holds up beautifully when you fry it.  I'm in love.

Elizabeth N made fried queso fresco for us for breakfast one morning at the Renegade party at my house this past summer.  Holy CRAP it was delicious.  So much so, that while I was grocery shopping earlier today, I saw some and bought it -- GMTA!

Butter works as the frying medium as well.

And I'm the one who kept stealing it straight out of the frying pan.  I'm surprised there was any left for you, lol.

I came home and made it and my kids wouldn't speak to me.  They thought I've completely lost my mind ... frying cheese with no bread.

They don't know what I do when they're not home ...

Thanks for the heads- up Melissa!  I love cheese and can't wait to try this, although I will have to put it off awhile while I heal from surgery.  But I love Costco - thanks again.

Besides, I want to try anything that someone as hot as Diana Cox eats and likes!  Seriously stunning in BC's dress the other day!!
