Hello, my name is Laura and I write from Italy.
five years ago I had surgery for obesity (bilio pancreatic diversion according to Scopinaro) with colorectal town of 100cm, with good weight loss (about 50 kg).

 My weight has increased by 15 kg last year, because of excessive use of simple carbohydrates and a reduced post-surgical malabsorption.
I would lose weight but this seems blocked, even now that I have reduced the intake of sweets, I wanted to ask if you have to suggest strategies.
blood parameters are ok, only slight deficiency of vitamin B12, iron, folate....
My life has changed and improved, now a woman only overweight but not obese, I feel younger, more athletic, I have no other associated diseases, and even though my weight has increased my body is healthy, this is what counts.

Welcome Laura!

Try increasing your protein and liquids.  Over 100 grams of protein each day and 100 ounces of fluids each day also.  No sugar at all, no white carbohydrates, no pasta unless you make the pasta yourself, like spinach pasta and add almond flour instead of regular flour.

Sorry for the hijack Laura

Michele, do you have to add any semolina to keep the pasta together? My noodles are gross without it. I'm doing something wrong.

I use *gasp* regular flour, eggs, oil and salt.  I just add things like the spinach once in a while.  I really haven't tried any of the other flours because fresh pasta doesn't have the same effect on me.  No gas with fresh pasta!  I don't make it very often, because I think it is a PIA. I was recommending the almond flour because she is trying to lose weight, I should have put in a caveat...lol

All my recipes are packed right now...

Here's a recipe that is close to what I use:

2 1/4 c. all-purpose flour
1/3 c. water
2 eggs
1 tbsp. olive or salad oil
1 tsp. salt

 

In large bowl with wooden spoon, stir 2 1/4 cups flour with remaining ingredients to make a stiff dough. On well floured surface knead dough until smooth and not sticky, about 20 minutes. Wrap dough with plastic wrap and let rest 30 minutes for easier rolling. Makes 1 pound noodles.

I usually make a 'bowl' in the middle of the flour, put the eggs and oil in and start working the dough inwards, adding the water as needed.

Thank you for your recipe. I guess I shouldn't freak too much about the flour, since I'm pretty much done with my weight loss, and nothing much gives me gas, but I feel like I should still avoid white flour. I guess noodles are one thing I'll keep it in. I'll put chicken over the pasta and call it good!
