Give MaryC a holler and ask her to put you in touch with her niece, Lynnbee. You might recall that her issues got so bad that she had to have a complete takedown of her DS. She has been a researching fiend on this subject and worked incredibly hard to make diet changes work. (None of them did, I'm sorry to say, and I don't know if the DS takedown really helped much.)
For the first six months I couldn't get near anything involving gluten - bloating, gas, diarrhea and much worse smelling poo. Now I can eat anything whole grain with no issues at all. Potatoes, corn, brown rice have never bothered me. I also eat oatmeal regularly and that has gluten in it. Interestingly - I still can't tolerate vegetables very well - they go right through me.
I don't think it's an allergy, though.....just an intolerance.
Now my issues seem to be any simple carb (that isn't sugar, sugar doesn't bother me at all). Even white rice flour gives me bloaty gas but brown is fine. I had brown rice pasta last night with meat sauce with no issues at all. But if that had been white pasta, I would've been bloated and majorly gasy.
I did find that Beano helps with gas and bloating if I'm going on vacation or in a situation where I need to not be farty. I'm taking Beano with me to France next week because I WILL eat bread! However, Beano will not change that horrid simple carb smell of the poop. Blech. Thank god for Ozium.

I don't know if I am gluten sensitive or not. What I do know is that I can not eat wheat flour or white flour UNLESS it is fried up on chicken. I can eat fried chicken all day long.
So I just don't eat it. I can eat rice products like rice cakes and gluten free bread made from rice. I can also eat hushpuppies made with corn meal and corn bread and corn chips.
If I eat anything "multigrain" or wheat or white flour I blow up like a 15 month pregnant person and have severe gas pain.
So I just don't eat very much of what blows me up.

This is a very interesting thread for me. My belly bloats up, I have painful gurgling going on, and if I try to go to sleep, I am woken up to sit up and burp, or try to. Later comes the footching, and it can last all day long, depending on what I ate.
I've experienced this with all flours, including rice and nut flours, Dreamfield's pasta, and gluten free bread (rice flour), potatoes, rice, and anything starchy, like corn products. I can even do it when I pick the meat and cheese out of lasagna. So maybe the flour is blending with the other foods when it's cooked? IDK
I avoid those foods, or TIVO them like Diana Cox advises, so I'm not footching around people. Sometimes, though, I suspect that something has hidden flour in it, because I'll eat out, and then get bloated, even though I don't THINK I ate any flour. It's one of the reasons I order food the way I do. Subway, just bacon and provolone cheese toasted. Applebees, just fiesta lime chicken, no rice. Wendy's, just the guts of the sandwich, no bun. Because if the bread touches the part I do eat, I'm in trouble. Even if it's totally whole grain.
