SOOOOOOOO good and sooooo filling. My family loves it. Just thought I would share with you all since you guys are so great about sharing good and easy recipes!
White Chicken Chili
1 Can 12.5 oz Chicken Breast, drained
1 Large Jar Great Northern White Beans (not drained)
½ Jar Salsa (15oz or 18oz)
2 Cans Chicken Broth (12oz)
2 C Shredded CoJack Cheese
Put everything in a medium sauce pan – heat until cheese is melted.
To thicken the chili up – I puree probably ½ - ¾ of the northern beans in my food processor. My kids don’t like to see “chunks" of tomatoes etc……So I also puree about the same amt of the salsa before I add it.
This recipe came from a can of Members Mark (Cost****anned chicken. I use shredded poach chicken breasts (or just poach them in broth and cut them up) I have also made it with Market Day cooked, cubed chicken breast.
Depending on how spicy you like things – you can also add a small can of green chilies – or use a “hot" salsa.
I typically serve it with a dollop of sour cream on top with “scoops" for dipping for my family.
Enjoy!
