Does the fat help avoid gas from carbs?
I had a lot of similar fears pre-op, but I have found that so far I don't miss food the way that I used to before surgery. I baked brownies for my students the other day and was happy with just a taste. 1 taste didn't bother me, and I was satisfied.
I haven't tried a lot of the items that other people struggle with, but popcorn, corn chips, and wheat crackers (in moderation) don't bother me. I haven't had trouble with fruit either, but all I've tried is a couple of strawberry's at a time, or a couple tablespoons of pineapple added to my yogurt.
I keep gas-x in my purse for emergencies, but I usually only get gassy in the evenings, and a lot less often than immediately after surgery. I went back to work as a HS teacher 6 days after surgery and I was afraid that emergency gas problems would cause huge class disruptions and I had nightmares about what the kids would say. It hasn't been a problem at work at all.

Carbs with fat don't help the gas situation for me. Sure tastes good though.
Too much fat increases gas for me.
I can eat fruit after surgery just fine. It is a possibility to become a bit intolerant to the fructose in fruit though, because of the shortened absorptive area in the gut. Fructose intolerance is fairly common even in normal people--ever heard of kids getting diarrhea from too much fruit juice? Fructose is one of those things that requires a door to get into the body, and it's possible to fill up all those doors so no more fructose can be absorbed and it passes into the colon and ferments to cause gas.
I wouldn't worry too much about the fruit thing. Certain fruits have more fructose than others and as long as you keep the servings generally small, you probably won't overwhelm your fructose threshold.
