Do you ever eat cereal or a waffle?
My most common breakfast is jerky or tuna salad. Great fun!
I tend to 'save up' carbs for one evil indulgence. I will keep my carbs to 10 or so/day all week and have something evil on the weekend. Like a sandwich or a piece of cake or pie. If waffles or bagels were my favorite carbs, that's what I would have. But I am a slow loser and gain easily so I don't have as much freedom as many.
Yes, I do once or twice a week. But to make sure I am getting my protein in...
For waffles, I cook up everyone else their waffles and then when there is just enough batter to make one for me, I stir in a scoop of Unjury unflavored or vanilla protein (add a teaspoon of milk if the batter gets too thick). [I've also made a half-batch of waffle batter, mixed in the protein powder and froze the leftovers and heated in the toaster oven at work.]
For cereal, I mix a teaspoon of unflavored or vanilla Unjury into my milk, then pour it over a small bowl of cereal. I know its probably not the best choice for me, but the low sugar cocoa puffs are pretty darn good!

Yes, sometimes I do eat them.
Some other good protein choices if you don't like meat or eggs for breakfast would be....
-Oatmeal made with milk
-Protein shake (you are doing that already though)
-Protein bar (my favorite are those around 20g of protein, anymore and it tastes yucky to me)
-Cottage Cheese
-Yogurt
-1/2 bagel with cream cheese
-1/2 english muffin with cheese melted on top (on of my favorites!)
-Peanut butter (especially good on a banana, yum!)
-High protein cereal
Have you ever tried an egg casserole for breakfast? Even if you don't like eggs you might like a quiche type entree. You can buy them pre-made or make them yourself. My husband hates eggs, but loves a good sausage/egg casserole.

I am 7 1/2 months out and still have trouble eating much if anything, but breakfast is my most difficult time. Most days I have to force myself to eat breakfast and I always look for protein even if it isnt much it adds up during the day. I have found a couple cereals which have 11-13 grams of protein in 3/4 cup dry cereal. I ususally just eat it dry as it is easier for me to handle but on occasion have been able to add milk whi*****reases the protein. I like the crunch of the cereal but on most days my breakfast is not traditional "breakfast foods" but just about anything with protein that I can stomach
