Are we going for quick and easy or just GOOD!?!?!?
Here's one that I consider quick n' easy. It's Heavenly Hash Potatoes, but I was able to make it healthier.
1 bag diced frozen Potatoes poured into 9x13 baking dish
Combine the following in a bowl:
1 can cream of chicken soup (I use 98% Fat Free)
8 oz sour cream (again you can use Fat Free)
1 diced white onion
2 cups shredded cheese (I use casserole blend or mild cheddar)
Spread mixture over potatoes and bake at 350 (I think) for about 30-45 minutes. You can top with extra cheese if you like. Let me get specific temp and time when I get home tonight.
I like it as a side dish, but you could also use canned chicked or chicken breast chunks in the mixture and have a meal.
