Your Thanksgiving Blessing
We used that same Catholic blessing for many, many years. Now my father is an ordained minister in the Anglican church so he says the blessing which usually thanks God for a beautiful day, save travels for family, etc. On thanksgiving we go around the table and say one thing that we are thankful for.
A funny story about the blessing: My mom is one of 7 children and they used to take turns saying grace. The first time the youngest was asked to say it, this is what he said: "Rub-a-dub-dub...thanks for the grub...YAY God!!" LOL!!

This is a sweet idea. Like others have said, we were taught the simple prayer "God is Great, God is good, let us thank him for this food." When we were in grade school. We kept it up as long as we all lived at home. Now, when I am with family, my long winded but very spiratual aunt offers a blessing, personalizing it for whoever isn't there, asking for safety for my cousin who is usually deployed around the holiday season, and of course for those family members we mourn.
