Shrimp anything is wonderful! Thanks for the scampi recipe. I've not made it with chicken broth before but will definitely try it next time I'm in the mood for scampi!

Thanks Tia! Glad you're back.

Where can I find Dan's cookbook??

I printed all of these recipes out. I'm sure they will come in handy. :) I get bored eating the same thing all the time.

I'm with you on that one Lisa. I get bored rather quickly of the same foods also and it's the reason I started this thread. I hope you enjoy the recipes we've shared. Do you have one you really like?.

Here is one of my favorites from Dan's cookbook.

Taco Soup
2
lbs ground beef                   1 med. Onion chopped
1 can kidney beans                    1 can pinto beans 1 can black beans                      2 can diced tomatoes 2 pkgs of taco seasoning            2 cans corn 1 pkg Ranch dressing mix   Brown ground beef and onion.  Add taco and ranch seasoning and mix well.  Add rest of ingredients. The longer you let it simmer, the better.

I highly recommend Dan's cookbook, I've found lots of great receipes in there.  I got mine at one of his support group meetings.

Thank you Christy. I'd be interested in looking at Dan's cookbook. Can it be found at Amazon.com? What is the title of it?

I don't think it is available on Amazon, I couldn't find it.  I think the title is something like "Life after weightloss surgery" or something of that nature.  I post a thread to Dan and ask him if he has some to post how they can be ordered.

RNY on 10/06/08 with
Mine is a crock pot recipe....I LOVE IT!!

1lb bonless skinless chicken breast
1 packet taco seasoning (I use the 40% less sodium one from Old El Paso)
1 small jar or 1 cup salsa (I use a full small jar)
1 can condensed lowfat cream of mushroom soup
1/2 cup FF sour cream (or I guess you could even substiture greek yogurt here)

Line bottom of crock pot with chicken. Take Packet of Taco seasoning and sprinkle over chicken. Pour salsa over then put can of cream of mushroom on top. Cook for 4-6 on low. When its done stir in the 1/2 cup of sour cream.

The recipe calls to then serve it over spanish rice but I usually serve it over black beans for extra protein and YUMMO!!

Also I like it because the chicken is very moist and wet and goes down real easy!!
