Chicken Salad

I love chicken salad.  The problem is that the canned chicken seems dry even when I add stuff to it.  My pouch didn't like the canned chicken.  It's weird.  That's the only thing she doesn't like so far.  (I've tried it twice.)  

Does everyone here use canned chicken, or do you cook it yourself and how do you cook it?

I bake mine in the oven or grill it outside on the grill. I love chicken salad too. I add mayo and I LOVE to add grapes and almonds sometimes.

I tend to use canned chicken in a salad or in a soup. I don't have it that often. I am more into tuna these days.

You can get really yummy, plain, pre-cooked chicken breast from Trader Joe's (referencing your other post here) and chop it up in cubes, throw in some light mayo, and add sliced grapes and slivered almonds (as Gail suggested).  I really like that flavor combo.

When I have the time, I'll usually crock pot a few chicken breasts to make chicken salad for the week.  Throw about three breasts in a crock pot, cover them almost completely with water, add some salt and pepper, and cook them on low for a few hours.  They come out nice and tender and you don't have to pay attention to them :)

I've been doing the grape and almond combo for a while now, so I might switch it up soon and either do apples or some cranberries as additives for flavor and texture.  You really can't go wrong!

I like to get a roteserie chicken from Costco and use that for chicken salad. I like to add red grapes and cashews, or mandarin oranges.

I've tried canned chicken but I don't really care for the consistency. 

I'm with Ren on the Rotisserie chicken, I find that the best for making chicken salad.  I just add some light mayo, salt, pepper, onion powder (I had issues with raw onion early out), and terragon.

This may seem weird, but I microwave chicken breasts and they come out really tender and moist. Plop them on a micro safe plate, cover with saran and zap 'em 5-7 mins depending on how much chicken (usually 6 min or so is good for about a pound). Makes for awesome chicken salad. And I always toss out my favorite--mayo with a tiny bit of splenda and curry, grapes, apples and walnuts--yummy.

You can also cook them in the Zip Lock Steam Bags.  I need to really buy stock in them as I cook most things in them!
