Learned a new trick

I tried out a new trick last week, and successfully did it again last night. Thought it might help others.

I filled a tray with FROZEN skinless/boneless chicken breasts (the Costco kind). Drizzled olive oil over them. Seasoned (Cadavar's Greek last night), and loosely covered with tin foil. I baked them in the toaster oven at 375 degree for 40 minutes, leaving them in the oven to cool down afterward.

The chicken was INCREDIBLY moist both times I tried cooking them this way. I chopped / sliced it up and popped the container in the refrigerator to eat on for a few days.

We made salads, pita pockets, scrambled eggs etc. It was really useful to have a good solid protein prepared in the fridge waiting. And it couldn't have been easier cooking them from frozen solid. Took just a few minutes from entering the kitchen to putting it in the oven.

gotta love the packages of costco chicken. That sounds like a tasty recipe.  I can't stand dry chicken.  I'll have to try that. I usually grill up a whole package of their chicken 10-12 breats worth.  slice it up, put it in baggies already portioned out.  I freeze some for easy later use and I have some for lunches or other meals that might need some protein added to them. I really do much better when the food is ready to go than I do when I'm winging it. Scott

If you have a seal-a-meal you can also us a technique called Sue -V(spelling )  ( or in english UNDER VACUUM )  Vacuum seal the chicken seasoned any way you like , and then pouch it in water that is no hotter then 180 for about 20-25 Min.s  It will be very moist and tender. Best wishes  Nick
