Shoots, Shrooms & Shprouts: The Way of the Dietician

Gately I've really been unable to stick to any good eating plan. I'm not gaining weight, but I worry that too much junk in is somehow some way going to cause health problems somewhere down the road. So I've had my wife make this concoction that I take to work in my lunchbox and that I have to eat every 3 hours. It contains bamboo shoots, big rubbery mushroom caps, bean sprouts, chicken strips and a couple a bulk foods that are only readily available in Japan (soy pulp and Konyaku jelly). I usually eat a half a grape fruit (peeled and chewed) at the same time.
Many dieticians recommend 36 grams of fiber a day from real food a day to lose weight, which is why I chose this route. I also believe it can counteract the trans fats and cholesterol that I get (mine tends to stay low naturally, anyhow) and help keep blood sugar in balance.

I have been eating this Konyaku/soy noodles lately with fantastic results. Only 40 calories per bag they are a great replacement for pasta. that with a little chicken broth is a 50 calorie meal that fills me up and is helping me get through this two week pre-surgical diet. I am trying to shrink my liver and have dropped about 12 pounds in the last week.
I knew about the Konyaku potatoe and tried for years to find it before this stuff was released.

I think that stuff was nearly nonexistent in the states a couple of years ago. Now they've got the powder and everything. I'm eating squares of the gel along with bamboo shoots and bean spouts and chicken. It's pretty filling. Surprisingly, the powder is hard to find here. I had to order it on the net.
I also eat nuts and will peel and eat a grapefruit.
