Apparently I can! lolol... I tried making taco meat from scratch a few days ago and succeeded.  Being spatula-challenged, I have decided to conquer it in order to make my healthy food intake a little more exciting.
 
So I'm moving on with my experimentation.... last night I decided to do a dessert that my WW leader gave me a recipe for.

I made a health apple crisp!!! It was super easy! Man, I surprise myself some days...

I topped it off with some sugar-free vanilla ice cream and YUM!

I modified the recipe a little because I didn’t have an 8 x 8 baking pan or the Weigh****chers brand oatmeal. Instead, I used that huge Pyrex dish and just a generic brand of brown sugar oatmeal (I actually used 2 packets instead of 1 because I wanted more of the taste) BUT, here is the basic recipe:  

NEED:  
Butter (spray)
1 container WW brown sugar oatmeal
8 x 8 baking pan
6 medium apples
Cinnamon  

Peel, slice and core the 6 apples. Spray the bottom of the baking pan with the spray butter and cover it with the apples. Sprinkle cinnamon (to taste) on top of the apples and then evenly sprinkle oatmeal over the apples. (I had to ask if the oatmeal should be cooked first… lol... but no, apparently not.) Finish off by spraying the apples with the butter. Heat the oven to 350 degrees and bake until tender (40-60 minutes).    

I also bought some sugar-free vanilla ice cream and had it with that. YUM!!

Oooh!! This looks so good!

Mom and I just bought a whole bag of Honey Crisp apples from Cub because they were on sale for $1.77 a pound!! That is SUCH a good deal.

I will definitely have to make this and soon!
