Delicious WLS-friendly seasonal breakfast/snack!
As temps cool lower, I believe it's common nature to 'crave' the former pre-WLS comfort foods. This serves (pun unintended!) as a mummy substitute for apple pie, raw apple cake, apple anything!
Simple: toast your favorite bread (mine: Muesli or Sibenfelder), butter the toast. Add your choice of sugar-free applesauce, apple butter or your choice of prepared apples (sweetened as you deem appropriate):
I make my own chunky apple 'sauce' from Empire, Braeburn, or Cortland apples washed, unpeeled, and cored (with apple corer). I use two 9x13 pans, and 36 apples. Vertically cut apples into eighths. Cut horizontally into thirds or fourths (depending on apple size). Blend well in large bowl with apple pie spice (or cinnamon, nutmeg, and cloves). I add minimal Splenda (am fortunate it does not produce sugar cravings--individual results will vary) Put into 9x13 pans, bake 40 min. at 325 degrees, regularly stirring up. (check to ensure apples are desired texture). Let cool, then put into freezer containers. NOTE: if using unpeeled apples, ensure they're chewed to smithereens to avoid problems. I f you prefer peeled apples, simply reduce the amount and add spices/sweeteners as desired. ENJOY!
