Hey Hon!!  I detest dry Turkey!!!!  3 years ago I hosted Thanksgiving here and now it is my turn again.  I am going to do what I did then (except I might add that wine Kelly mentioned).  I cooked it ALL day the day before at a low temp.  Then at night I let it cool, craved it up and put it into a 18 qt. crock pot thing.  I pour alot of Chicken broth over it and covered.  Thanks to MN weather in Novemeber, I put the huge thing in the garage.  EARLY the next morn I took it back in the house and turned the pot on and again at a low temp and MAN O MAN was it juicey!!!!!  **the following 2 years of Turkey have been at my mom's or sisters and DRY'O'LA!!!!.....Looking forward to having me a juicey turkey again!!!
**Also, on a positive about doing it this way your oven is free and turkey is done, and you can specialize other dishes.......ok, I'm hungry! LOL

I have never had a problem cooking a turkey, which meant I was always the house for Thanksgiving dinner! That stopped a few yrs ago, finally! Now the way I cook a turkey is pretty simple:

A- Arrive at In laws late/early Wednesday eve/Thurs morning
B- Bed down after that 10 hr drive
C- Wake up after FIL has bird in oven
D- wake up, visit all day
E- I make the gravy!
F- enjoy the meal
G- clean up after the Man made the mess --aarrggggg!

LOL, life got simple. When we don't travel for Thanksgiving, I just toss a turkey in the oven in one of those foil pans/roasters, cover top, cook, baste and visit.
I wish you the best of luck on your creation!
Happy days!

I have hosted plenty of times, always use the bags, always rub the birdie down with butter, then salt and pepper before wrestling it into the bag.

I'm LOVIN' Sandie's idea of cooking it the day before, carving, and re-heating in a big ol' crock-a-roonie!

But THIS year, we're having my mom and my dear Junebug (stent woman from August) over for a noonish-brunch, then later heading down to the BIL&SIL for the turkey dinner.  They ALWAYS have their big turkey dinner for the evening meal... why do it twice?  I feel kinda bad for Junebug for not having turkey, but she's cool - just doesn't want to be alone that day!  I love her...
