WLS-friendly holiday treat, and OT gift idea

Went to a holiday party last weekend and took these (a recipe Farrah shared two years ago thank you again Farrah!)  The original recipe calls for three 8-oz cream cheese, though I prefer two Neufchatel and just one cream cheese for a lighter non-cheesecake taste.  Enjoy!  

Sernicki

(Recipe makes 22)
Preheat oven 300 degrees;  put cupcake papers into one 12-cupcake tin

Blend together:  3 - 8 oz fat-free room-temperature cream cheese (or, two Neufchatel and one cream cheese)
                              1 cup Splenda

Add:                      2 tsp  pure vanilla extract
                              5 eggs

Spoon into cupcake holders (fill full as they don't rise, but will sink when cooled)  Be careful so no batter falls/drips outside papers or onto pan), and bake 40 - 45 minutes.   Leaving oven on, remove them and let cool five minutes.

While those bake, Blend separately for topping:

                               1 cup fat-free sour cream
                                1/2 cup Splenda
                                 1 tsp pure vanilla extract

Place heaping tablespoon topping onto each cooled Sernicki;  return pan to oven for five minutes.  When cooled, add  a pecan half, though I prefer fresh strawberry halve and/or add fresh blueberries.

Fun gift-giving to  non-WLS friends:

Home-made Irish Cream (non-WLS friendly)

I purchase pint-size Kerr or Mason jars with lids/covers.

One pint half and half
1 15 oz sweetened condensed milk (do not use evaporated!)
3 eggs
1 tsp pure vanilla
1-1/2 TB chocolate syrup
1 cup Southern Comfort
1/2 cup light rum

Put all into blender and whip until frothy.  Makes one quart.  (For making more, best to do each blender full separately).
Keeps up to two weeks in fridge, just shake and serve.

Thanks! Sernicki? We have a Russian food called Sirniki.. I wonder if that's the same.  Maybe not. Thanks for the reciepies!
