Beer Cheese Soup?

I figured this might be a nice higher protein food option for now since I haven't figured out very many things to puree, but wonder if the beer evaporates and if I could make it with lower fat cheese.  Anyone make a WLS friendlier version that's still good?  Sounds so nummy!

I tried it at a resteraunt and it was okay for me...... That does sound so yummy........

I tried it once at a restaurant (I don't cook) and I got really sick.  Could have been all of the fat in the cheese?  or the dairy?  Haven't had it since.  I hope you can make it work for you.

Schwans used to make a broccoli cheese soup that I ran through the food processor to liquify when I was on pureed.  It worked for me in the small amounts that I was allowed.  Hope to see you in Eagan tomorrow.
