RP's Thud Bread
This morning at coffee Rick Pete brought a sample of a great bread and was gracious enough to share the recipe. I told him I'd post it so here it is (it's delish):
Rick's Thud Bread
2 C. Warm Water
4 tsp. SAF Yeast or 2 T. Bob's Red Mill Yeast
4 T. Brown Sugar
1 T. Whole Wheat Gluten
3 C. Whole Wheat Flour
2 C. Unbleached Bread Flour
1 tsp. Salt
1/4 C. Canola Oil
1/4 C. Steel Cup Oats
1/4 C. Flax Seeds
1/4 C. Millet
1/4 C. Sunflower Seeds
Dissolve yeast in warm water
Stir in Brown Sugar & Gluten
Add Whole Wheat flour, beat 200 strokes
Let stand 10 minutes
Add oats, flax seeds, millet, canola oil, salt, sunflower seeds
Add 2C. bread flour (a little more if sticky)
Knead 6-8 minutes, place in large oiled bowl
Let Rise 1 hour covered with a clean towel
Punch down, divide in half, form into 2 loaves
Place in greased bread pans, let rise 45 minutes
Bake at 400 for 30 minutes

That was some gooooood bread! Geeze, RP - the protein fiber bars last time, "thud" bread this time, what's up your sleeve for the NEXT MG coffee?

I had a lil' slice with my rotisserie chicken soup tonight! (Thank you, Ali... I LOVE that soup!)
