I got this off of a Crohn's Disease website... I have PCOS so I always look for low-carb things. They use nut meal instead of flour. They taste great! I am not sure about how it would affect RNYers, so take caution. :)

  • 2 1/2 cups nut flour (I buy mine at Trader Joe's)
  • 1/2 cup honey
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 4 eggs
  • 2 mashed bananas
  • Just throw it all into a food processor, mixer, or blender, and combine.
    Line cupcake tins with paper cupcake liners. Spoon the batter into cupcake tins filling about 2/3 full..

    Bake at 375 degrees F (200 C) for about 15 minutes or until the muffins spring back when pressed. (It takes me more like 20-25 min)

2019: 11 years out and maintaining a loss of 150lbs.
