Creative food ideas
This was once handed out at a PNC support group and I really liked it. Today I finally had the time to type it all up.
Add some spice and variety to your food plan with the following patient-recommended food ideas. (Of course, follow your clinic's rules in terms of what you can and cannot have):
1. Roll up a pickle and fat free cream cheese in a slice of deli meat
2. Add a little salsa or green peas to your cottage cheese
3. Add some pickles to your deviled eggs
4. Top your refried beans with some grated cheese and salsa
5. Make a pizza by adding your favorite toppings on a tomato slice
6 . Slice a cucumber and top with shrimp and mayonnaise
7. Stuff a celery stick with peanut butter (remove celery strings)
8. Dice hardboiled egg, mix with grated cheese and melt under broiler
9. Make your own lettuce wrap. Fill with your choice of deli meats, cheeses and veggies
10. Eat the middle out of a taco or a burrito
11. Grate and bake parmesan cheese for a delightful cheese cookie
12. Enjoy fresh shrimp in ****tail sauce
13. Freeze a Go-Gurt for a tasty summertime treat
14. Try string-less snap peas, sugar peas or China peas fresh
15. Try freezing grapes
16. Freeze Crystal Light or other sugarless beverage and blend for a great slush
17. Make a smoothie with light yogurt and your favorite fruit
18. Make a seven layer Mexican dip and eat with a spoon
19. Make a mini-chef salad with all your favorite meats, cheeses and veggies
20. Make a mini veggie and cheese omelet.
21. Roll up an asparagus spear in your choice of deli meat. Serve with mustard.
22. Enjoy pickled mushrooms or pearl onions with a dash of soy sauce.

Oooh - I LOVE the baked cheese cookie idea!! I've had "Just the cheese" snacks before, and I like the plain cheddar ones, but thats a bit of $ I don't need to be spending right now. And I always LOVE the "burnt" cheese that you get on the side of a hot dish or with garlic cheese bread - I never THOUGHT about making some intentionally! mmm....

I make mozzarella "haystacks" all the time! I put about 1/4 C. of shredded cheese on a baking pan & pop in the oven. They'll melt & then you leave them in there until they're crispy. Dip in a little marinara. mmmmmm
I'll also make a mock tuna melt where I mix tuna with mayo & then put on a baking dish, top with cheddar (and sometimes a pineapple ring under the cheese) and broil until cheese is melted.
Great, now I'm hungry again. LOL!
