Peanut Butter Protein Balls

Here's a recipe I found, but modified to be more satisfying and full of more "good" stuff.
All of the amounts are approximates - you kind of have to mix it all up and see how dry or sticky it is and just adjust to your liking.
1 1/2 cups Peanut Butter (Original recipe called for SF PB, but I couldn't find any.)
4 - 5 scoops of your favorite Protein Powder
1 cup Oatmeal
1/2 cup Flaxseed (I used the cold milled kind, cuz I don't think you have to grind that to get the full affect of it.)
2 tsps Vanilla extract
1/8 to 1/4 cup of your favorite SF syrup (I use caramel)
Mix with mixer and add SF syrup last to get the mixture to the right consistency for rolling balls. I refrigerate for an hour and then use the large side of a melon baller to make my balls. They are about an inch in diameter. I keep them refrigerated after making.
The protein content will vary, depending on the type of protein powder and PB you use, but this is a great treat and fills you up and with the Flaxseed, it helps keep things moving! I'm thinking this could be a great addition to the "soft" diet right after surgery, but you should check with your doc or nutritionist first.
Enjoy!
