Need a muffin recipe
I have been looking for a recipe for muffins that I can eat for breakfast in the morning and not get in to trouble. Help me please and I will be grateful for ever.
BTW....I am doing fine. My dd graduated high school two weeks ago she will be going to college in the fall. So I am feeling a little blue. But doing good.

Not sure this is what you are looking for. However, I'll give it a try. I don't "use recipes" it is off the top of my head...so here goes it.
Egg Muffins or similiar to a quiche.
I take a mix up stuff for scrambled eggs (egg, milk, ham, cheese, bacon, onions ect ect) - And put it my Tupperware Mini Muffin pan that can/does go in the Microwave or Oven. In the micro it is about 2 min. and they are done. My kids LOVE them. In a reg. muffin pan I am not sure how long to cook in the oven... Probably same as a quiche recipe.
These are quick, easy and pretty tasty. I also add salt because they can be a bit bland.

I think you can buy a flour replacement by Atkins...you can make pancakes and stuff from it. The best flour to use is Soy...so get that instead of regular flour. My concern is if you really want to focus on muffins...if they are for you. Once in a while, having a muffin is okay, but I wouldn't make a habit of eating muffins.
You could probably use any muffin recipe and replace sugar with Splenda and replace flour with Soy flour. Soy flour is highest in protein of the flours. If you decide to use wheat flour, I'd go to multi grain or at least whole wheat...perhaps even grind it yourself.
