So you say you like Taco Bell's refried beans?!

I've been brainstorming what to take to the Hickory support group's protein potluck this Thursday.  After a failed attempt at vegan meatballs in a tomato basil sauce, I kept thinking perhaps I'd take some type of crustless quiche squares.  Then, an idea hit me.  How about a version of Taco Bell's refried beans in casserole form?!  Hmmm. 

After getting nowhere trying to find a recipe online, I decided to try it on my own.  Thinking of how sweet potato casserole is made, this is what I came up with:

Shauna's Refried Bean Bake
1 can Old El Paso fat free refried beans
1 egg
3 T Daisy light sour cream
3/4 c Old El Paso mild enchilada sauce
1 green onion, chopped
1/2 c Kraft 2% shredded cheddar cheese

Preheat oven to 400 degrees.  Mix refried beans, egg, and sour cream together and spoon into an 8x8 glass casserole dish.  Top with enchilada sauce, then chopped green onion, and end with the shredded cheese.  Bake for 30-40 minutes. 

My 20yo daughter says that they are actually BETTER than Taco Bell!  I think I calculated that the entire dish has something like 34g of protein.  It will be very easy to quadruple and bake in my large rectangle casserole for Thursday.  I hope the support group likes it as much as we do.

I can't wait to see ya, hon.  It's been way too long.  :)  Are you still bringing your low-carb cheesecake dish?  It sounded like ~x~heaven~x~!!!

I LOVE refried beans! This sounds really good and I am going to try it but I will leave out the onion.. I hate onions and would rather be strung up by my pouch then have to even smell one other then that this sounds fantastic and I will have to give it a go!! Thanks for sharing!!

That does sound really good. I wonder if it would be good with all the ingrediants listed and some ground beef or turkey in it? I will have to make it for my family.

Oh yeah.  I would do the ground beef or turkey cooked in taco seasoning mix then put that on top of the bean layer before the enchilada sauce.  You could even add some black beans and/or corn to the meat, some black olives on top of the enchilada sauce, top with corn chips before baking, serve with dollops of sour cream (and salsa?!) on top, etc.  I love getting creative with casseroles!  (Perhaps that's part of my "fluff" problem?!)

I think I would skip the corn or corn chips even though that sounds tasty too. But I know adding the black beans would be really good. The corn might take away the protein value a bit and load it with just a touch too much in the wy of carbs. But it does sound good that way doesn't it?
