Hi Erin -

Sounds like you are plugging along with the eating.  I know it's very difficult right after surgery to get it all in.  I dealt with the morning nausea thing too and I had to start my day on liquids because my pouch refused anything solid.  Warm tea is great for this (mmm... or protein coffee LOL).  I'm now 14 months out and only in the past couple months have I been able to do solid foods first thing in the morning.  Still can't do eggs though.

Good to know I am normal!  I do ok with the coffee, but it seems like it takes me HOURS to finish my travel mug which is only 20oz. 

Sometimes i have a hard time telling if the gnawing in my tummy is because it wants food or doesn't want food.  i just don't get hungry really??? 

I do get thirsty though.

This is my first time posting my meals, but I felt compelled since I am having Nik's Tuna casserole tonight!! I can't wait to try it... I prepared it last night so all I have to do is put it in the oven when I get home!

"....it's my birthday and I'll eat if I want to...." LOL!

Well all that su****alk was for nothing yesterday. We got there and saw a very empty, dark place with a sign on the front that said it closed in november. Would have been nice if they put that on their fancy website. We ended up with italian.

Today the hubby just informed me that I'm getting a massage and pedicure this afternoon. WHOOOOHOOOO!!!! can't remember my last massage and my last pedi was right before surgery.

anyhow, todays eats:

already had -

protein coffee
pumpkin protein souffle

probably have a very low carb lunch before my appt (not sure what yet)

after my pampering we are going the movies with the kids which means I'll more than likely munch on some popcorn (just keepin it real)

out to eat after that - I'll do my best and again try to keep the carbs to a minimum since then we are going home for cake and presents. And yeah, I'll have a few bites of birthday cake.

so there ya have it. OH! and yesterday after lunch we went shopping downtown. Peeked into an Ann Taylor Loft store - NEVER have shopped there. They were having an amazing sale of another 40% off already clearenced items. Um? 50$ jeans for 6 bucks???? HOOOLLLLAAA! and a size EIGHT to boot! I walked in there in size 16 jeans that were falling off of me because that's all I had at home. Left with a bag stuffed with clothes for under 70 bucks. IT was amazing. Almost all my clothes are from walmart and target - so not the best quality. But these prices blew walmart out of the water and they are an amazing quality. I was so happy. Now I get to go dress in my nice well fitted clothes for my birthday. happy day.

WLS-friendly tuna casserole

Ingredients:
3 cans tuna, packed in water 1.5 c TVP, reconstituted (I'd even go as low as 1 c.  TVP bulks things up, so if you want to have plenty to freeze, go for the 1.5.  If not...go for 1 c. I'd say)

zucchini, diced
1 yellow squash, diced
1 small onion, diced
1 small can of peas, drained
2 eggs beaten
1 can of low-fat cream of mushroom soup
¼ c. unflavored Greek yogurt (I use 0%)
1 packet dry onion soup mix
2 tbsp minced garlic
1 tbsp extra virgin olive oil

For topping:
1.5 cups fiber one cereal, crushed
2 tbsp I Can’t Believe It’s Not Butter
2 tbsp Parmesan Cheese
1 tbsp Italian seasoning
½ c. shredded cheddar cheese

Directions:  

  1. Sautee vegetables in oil and garli****il soft
  2. Combine tuna and TVP in a bowl and mix well
  3. In a separate bowl, combine greek yogurt, soup, and onion soup mix. Blend thoroughly
  4. Add veggies to the tuna/tvp mixture, add peas and stir thoroughly
  5. Add soup mixture and mix thoroughly, add eggs and mix again
  6. Transfer to a casserole dish
  7. In a bowl, combine crushed cereal, parmesan cheese, and Italian seasoning and mix thoroughly, pour on top of tuna mixture
  8. Melt “I Can’t Believe It’s Not Butter" and drizzle on top of cereal mixture, top with cheese
  9. Bake in a 350 oven for 25-30 minutes

I made this over the weekend.  So delicious!  I made a few changes to mine because I didn't plan well with ingredients.

Greek Yogurt -- used sour cream instead
Peas -- used edamame instead
Onion Soup Mix -- didn't have any, so skipped it
Onions -- they are buried in my freezer somewhere and I couldn't find them, skipped them.
Zucchini / Squash -- I only had zucchini, so used more and skipped the squash
TVP -- I remember Nik saying her batch made a ton, so I only used about 3/4c of TVP

Wow!  I substituted more than I realized.  LOL!

Well now it's "Pam's Tuna Casserole"! 

I will say I agree with you on the moisture issue.  I might bump up to the bigger can of cream of mushroom soup.  I tend to put zucchini/squash in everything so I just naturally put it in there.  The onion soup...I'm a salt girl.  The soup made it unnecessary for me to add salt to the actual casserole.  And I heart peas.  I find any excuse I can to eat them.

But making a recipe your own is what it's all about!!!
