Recipe-- Shari-taki Cinnamon Raisin Noodle Kugel

Okay, here's the recipe, with a disclaimer: shirataki noodles do not dissolve like reg'lar ones, so it stays noodly-- but the flavor's good once you get over the noodliness! I'll post pics this weekend.

2 pks Shirataki noodles (rinsed and parboiled)-- either cut in tiny pieces or buy orzo-shape
8 oz cream cheese
8 oz 0% greek yogurt
3/4 cup egg beaters
3/4 cup Splenda
4 tbsp cinnamon
3/4 cup raisins

Preheat to 350.

In bowl, mix cream cheese in chunks, yogurt, egg , cinnamon and Splenda with hand mixer.

Fold in noodles and raisins. (Probably will be better if you let this soak at this point overnight, but I don't. Shirataki don't absorb well, but do better if you give them time!)

Spray 8x8" casserole or baking dish, and pour mixture in.

Bake at 350 for one hour.

Let it cool some, and serve with SF maple syrup (I mix mine with some caramel DaVinci), whipped cream and toasted almonds.

(Counts are as shown but without toppings)

Cals: 127
Fat: .4
Carbs: 16.2
Protein: 16.7

For whole casserole (then you can divide as you like)
Cals: 746
Fat: 2.4g
Carbs: 205.9
Protein : 210.6
Fiber: 4.4g

Makes a great packable breakfast-- portion leftovers into Tupperware and pour SF syrup on it and heat 2 minutes in microwave.

I bought mine at Meijer -- it's a big-box grocery/department store here in Michigan (and I think Indiana). It was in the produce section near the tofu and organic foods area.  But you can also get them at Whole Foods or Asian food markets, I've heard.  My store only had the spaghetti and angel hair variety and cost about $2 for a small package.  Once I try them and figure out if I like 'em or not... I'll do some shopping around to see if I can find them cheaper somewhere else.

I only use about a third of a package per meal, so they last me a while.
