Carbquik Barbecue Chicken Pizza (Recipe and pic!)

Carbquik Barbecue Chicken Pizza
Makes an 8 inch pizza with a biscuit-y crust.Very tasty and insane with insoluble fiber...probably two meals for most, but if you can eat a South Beach Pizza, you can handle it.
2/3 c. Carbquik™
ho****er
three shakes onion salt
3 tbsp Low Cal Barbecue Sauce
3 oz diced cooked chicken
1/3 cup cooked sliced mushrooms
1/4 cup 2% shredded cheddar/mozz mix
1/4 diced pineapple
very thinly sliced onion (4-5 slices)
italian seasonings
Pre heat oven to 450 degrees.
1) In bowl, combine carbquik, onion salt and a little very ho****er-- just a couple tablespoons. Use egg beater and mix to make a sticky dough-- add water if you need it
2) Knead with your hands until dough becomes more dense and dry-- 2-3 minutes
3) Spray pan with butter flavored spray. Pour batter into pan and spread thin with back of spoon
4) Par cook for about 5 minutes. Remove and let cool 5 minutes.
5) In sprayed frying pan, brown the thin onions over low heat until caramelized
6) Spread BBQ sauce on top of crust. Add chicken, pineapple, cheese. top with caramelized onions and italian seasonings.
7) Bake 5-6 more minutes until crust browns on edges.

17.8g fat
46.2 carbs (but only 17 NET carbs)
41.4 protein
29g fiber
A little high in calories for my liking-- took a lot more Carbquik to get a good crust than I anticipated, but good to know it can be done, right? :)

I was just sayin in response to Shari sayin that it is high cal that the fiber cals prolly don't count. But I'll eat a pizza just cuz. I'm a little nervous about barbecue sauce, but I think if I eat a couple bites of salad first, I'll be fine. I find if I eat things like veggies and then eat something that has a little sugar in it (or sugar alcohols) I get a much better result then trying to send the aforementioned ingredients down first.
The website has all sorts of recipes. I'm figuring I can modify the bread recipe to my soft pretzel. I'm adding some Splenda, cinnamon and raisins and dusting the finished product in melted ICBINB, Splenda and cinnamon. If this comes out right...my goodness it will revolutionize my whole life!
