I caved to collard greens & cornbread (a review)

So I finally gave in to the urge for collard greens and cooked some today.  Yes, they were from a can (I know, I know--I'd prefer fresh too but I went with what I had) but they actually weren't bad.  It's a brand I found at Wegman's that's made in South Carolina (I'm too lazy to go read the can in the recycle bin or I'd tell you the name). I added some Goya Jamon (Ham flavored) seasoning and a bit of water and let them cook for awhile, they came out pretty good.  The review is of the Dixie Diner Carb Counter Cornbread.  I ordered some last month from netrition.com and hadn't tried it yet.  So I made it up today, I followed the directions on the pack except I used Fage 0% Greek Yogurt in place of the heavy cream/sour cream that it calls for.  I also added 1/4 cup shredded farmer's cheese (I heart the Amish) and 4 crumbled strips of bacon. O-M-G they were very tasty!!!  The stats per corn muffin (based on the instructions on the pack, not including my substitutions) are 51 calories, 4g net carbs, and 5g protein.
Rating: pouchworthy!

I must find this. I haven't had cornbread in over two years. I heart cornbread.

They sell it on netrition.com, Wendy.  I'll definitely be making it again, stats aren't bad at all and I like the taste.  It's kinda moist for cornbread but I'm thinking that's from the Fage.  Very good though, so I'll order more.

I had found a sugar free corn muffin from Butterfly bakery with 150 cal for a good size muffin.
Problem....little protien and no fiber.  Being the fiber queen ...not so good
I sometimes eat the vitatop con flavored. They are ok.

But will definitely try the dixie version.  Much better stats!

I thought of you when I was making them, that's why I posted because I told you I'd let you know how they turned out.  Pretty good and the stats aren't bad either.

When I just have to have greens I use canned too it's "Glory" brand. You literally do not have to doctor them up at all. Just heat them up and they are as good as I've ever tasted.

OMG you just made me want some greens. I cook mine with smoked turkey necks and a little liquid smoke with all my other seasonings and they are sooo good. I've gotten use to eating them without cornbread cause I still have way too much weight to lose. After I leave the gym this evening though I'm heading to the store. I buy the greens in the bag and they really don't take too long to cook. You would probably be really surprised.

ETA: The way you said you made your cornbread sounds really good though. I may have to order some.

Girl, I cannot cook greens to save my life.  My Momma Peg has got me spoiled, she makes the best collards in the state of Georgia!  So when I do cook them from scratch I just get mad because all that work and they still don't taste as good as hers.  Not to mention the yankee I am married to and his Daddy won't eat them, so it's a big waste just for me.  Nik is s'posed to cook me some one of these days but I think she's just leadin' me on .  I ain't too crazy about them with the smoked turkey but I've had them that way.  Momma Peg cooks them with LOTS of ham and some pig tails.  OMG they are SOOOOOOOOOOOOOOO good.  *Sigh* I miss Momma Peg.

That sounds soooooo good. I buy the pre-cut collards. Throw 'em in the pot with a smoked turkey wing and some onions and let it simmer! Haven't gone near cornbread since surgery. Would love to find that cornbread mix and make the hell out of it! I don't trust the CQ cornbread recipe. Cornbread is sacred!

Did you know Shari also has a cornbread recipe? I have to try to find it so I can post it.
