glass noodles

has anyome seen or used glass noodles or bean thread noodles made from mung beans?or the soba buckwheat noodles?

Are glass noodles and cellophane noodles the same thing? Either way no.

I have had soba noodles (in a sushi roll from whole foods) and I tolerated them fine but I have NO idea how to make that myself. Me and noodles don't kick it like that at home.

I used cellophane noodles all the time when i made springrolls, however i havent had any after surgery.  I would think they would sit well.  Now that I think of it springrolls sound really good.  ill have to experiment

I haven't tried them, but they sound painful to chew and digest!

I generally can't tolerate pasta, so I haven't tried these, either.

all i can see about them is they are made from bean starch and or potato starch ...id love to try them i just am scared  to try noodles or pasta i think they are also called cellophane noodles...

It's my 7th week post surgery and I just enjoyed a serving of glass noodles called Pan Wun Sen with bean sprouts, egg, and chicken. It never tasted so good! Easy to chew thoroughly and went down with no problems!! No pain or stomach upset after.

Cellophane noodles are called that because they are clear. They are about the consistency of spaghetti.

Soba noodles are softer, almost "spongy" in consistency so I imagine that's why I didn't have any problem with them. So far as noodles go, soba isn't a bad choice although IMHO, Nik has no business eating noodles in the first place!
