CarbQuik Pound Cake--The verdict and a question

Ok, so I finally made the CarbQuik pound cake per the recipe on the box yesterday.  I cut it last night and was not impressed with the taste or texture.  It's not sweet enough for me, and that kinda bitter CQ taste is coming through.  Also it's VERY dry and not velvety-moist like pound cake should be.  I know it needs tweaking, but I am NOT a baker, never have been, so I am not sure where to start.  Hopefully one of you lovelies that IS a baker will help a sistah out with this one.  I was thinking maybe another 1/2 cup of Splenda or applesauce to help with the sweetness and either sour cream or fage to the batter to make it more moistThoughts?  Ideas?  Suggestions? Anyone?  Bueller?

I would try the fage or applesauce.  Maybe some citrus flavor like the zest to hide the bitter taste?

Good idea, Jilly.  I'll add some lemon next time, maybe that will help hide the bitterness.  Thanks!

Unfortunately it is the FAT that gives pound cake that wonderful texture...
You can however "fake" it....
you can try.....

a couple tbsp of lite mayonaisse with some lemon juice and zest
or.....    a small jar of baby-food fruit..... like  banana and sf choc chips
                                                                     applesauce and apple pie spice
                                                                     peaches and dried cherries
any flavors you might like....
just reduce the liquid in the recipe so the thickness of the batter is about the same... and you may need to increase bake time by a few minutes...

That's another weird thing, the CQ batter is MUCH drier than regular pound cake batter, it's a very heavy dense batter.  Guess I'll have to play around with it some more, thanks for your suggestions!

I made the cinnamon swirl bread and it was good, but too fatty.  I made the mistake of not reading the i can't believe it's not butter label and used it in the recipe.  I'm going to try to make it again with Smart Balance and see how it goes.

I used real butter in the pound cake.    Sue me!  I'm southern, can't help it, anything but real butter in a pound cake is a sin!
