Have you tried the Carbquik cornbread recipe?

I made the Carbquik cornbread last night and it was really, really good. Y'all might already have this recipe, but for those of you who haven't tried it yet, here it is:


2 cups Carbquik
6 tablespoons cornmeal
2 eggs
1/2 cup Splenda
1 cup half and half
1/2 cup butter, melted

Mix all ingredients. Bake 400 degree for 20 minutes in un-greased pan.

Per Serving: 271 Calories; 20g Fat (58.4% calories from fat); 9g Protein; 20g Carbohydrate; 14g Dietary Fiber; net carbs 6g.

I didn't have half & half so I just used 2% milk. I halved the recipe and baked it in my Pampered Chef mini baker stone. I think this would be really good with some cheddar or parmesan cheese baked into it. Anyone else have any variations on this recipe?

I just use the Corn Kits Cornbread mix. It's 110 calories, 3.5g fats, 18g carbs and 2g protein per serving. That's made with 1/4c eggbeaters, about 1 c. 1% milk and about 1/4c Splenda. Those measurements are approximate from my memory but I do remember the numbers being better than anything else I'd looked up.

I love the carbquick for pancakes and topping for pot pies.
