Freeze crackers?
For a quick "cracker" alternative, I take about an ounce of shredded cheese. Doesn't matter if it's LF or not. Make a disk out of it on some parchment paper. Then microwave it for maybe 45 seconds or so. You'll have to experiment with the time. I like mine crisper so I go a bit longer. Let it set for a minute and then move it to some paper towel to "de-grease" and cool. They get crisp and taste better than any cheese flavored cracker you can buy. And they are all protein (and some fat). I like cheddar best but have made them with Swiss and mozzarella. I usually make a big batch and keep in the frig but they are best when fresh.
