Protein banana bread (with no flour!)

Boy it was a long weekend for me. First off, I am way overdue on my B-12 shot (bad Nikki!) but I'm out of needles and need to go get more. So I am draaaaaging. But, even at my weakest points I am still cooking! This week it's mostly for the upcoming Holiday Preview so I needed something quick and tasty for breakfast this weekend.

Check out my interpretation of protein banana loaves (I say my interpretation because I did NOT invent this recipe...just put my own spin on it. Anyhoo...head on over to Bariatric Foodie and check it out!

Could I use unflavored protein powder and add in some vanilla

I don't see why not, although I couldn't tell you how much vanilla to use. I'd say whatever you'd use for regular banana bread would work. Play with your food!

Darn!  I used the last of my BF vanilla Saturday morning and was stupid and didn't pick up another can at Walmart...  these look great.  Going to try them in muffin form though since I don't have mini loaf pans.  Will have to grab some more protein powder next weekend (walmart is 30 minutes away along a deer-infested two lane highway... not doing it in the evening unless its absolutely necessary)

I am soooo not creative in the kitchen. I want to make these tomorrow but I only have a BIG loaf pan or a muffin pan. Can you give me an idea how long I should cook it in these or what it will look like when it's done? Just like a real banana loaf?

I've never been successful with a loaf pan. Protein baked goos dont cook the same as regular ones. The outside cooks really fast while the inside cooks slow. I'd advise a muffin tin or cupcake pan if you dont have a mini loaf pan.
