suprisingly yummy
been experimenting in the kitchen, the result was suprisingly yummy. I've been trying to find a way to use greek yogurt that wasn't totally gross to me. so, i bought some hidden valley fiesta ranch dip mix and used greek yogurt instead of sour cream. then I coated some tilapia fillets with the mixture and broiled them in the oven. while they were cooking I threw a corn tortillas on the griddle and toasted them. put the fish on the tortilla with a little low fat shredded cheese and lettuce and voila! yummy fish tacos. I can't believe I even considered eating such a thing. LOL but it was really good. probably not something the kiddo would eat, but I can always make regular taco meat for her. she's getting used to having her tacos on regular corn tortillas instead of taco shells or flour tortillas. LOL
I always liked the taste of flour better, but since surgery I just can't eat them. They just feel like a big hard ball in my pouch. LOL corn tortillas have better stats anyway cause the serving size on the package is usually 2 where flour are for one. since I only eat one,I figure they are bout half as bad. LOL it takes a little getting used to the different texture, but overall they are pretty darned good.
