Are you able to take a cooler with you? I would say string cheese, lunch meat, Greek yogurt, fruit, veggies, whole grain crackers, is there any protein bars you tolerate or maybe some ready to drink protein shakes or low carb isopure water? I had to go out of town for a conference 3 weeks after my surgery...it was rough! However I did talk to the hotel and they gave me a fridge in my room for free. I told them I had medication that required refrigeration...wasn't a lie, I feel like that's what food is to me right now. A way to make me healthier and heal my body. Now, I want to "eat to live, NOT live to eat!". If you're stopping at hotels along the way, do some research ahead of time as to which "brands" already have a fridge in the rooms, and which ones have it available to add on so you know which ones to try and stop at first. Plus, you can refill the cooler full of ice before getting back on the road. Good luck on your trip and have a nice time, hope that helped a little!

BBQ and/or White Cheddar Soy Crisps are my fave and my son loves them too.  I order mine online at Netrition.com, but they sell them at pretty much any health food store (and most grocery stores will now carry them in the organic/health foods section too!).  They have the texture of rice cakes but are made with soy protein - lots of it! :)

Other go-tos:  Greek yogurt, string cheese (or whatever other cheese you like), pickles (I have to peel them with a carrot peeler lol), turkey jerky, turkey roll ups (slice of deli turkey rolled up with different cheeses, pickles, mustard, sliced cucumbers or other veggies, turkey bacon, FF ranch, BBQ sauce or whatever else you feel like), veggies with FF ranch or greek yogurt w/dill weed for dipping, cottage cheese with splenda and fresh fruit such as strawberries sliced up in it.

I also make my own "chips" by taking a Lavash Wrap or Flat-Out Wrap (or even a low-carb tortilla, but these tend to be a bit thicker and harder to crisp up), brushing it lightly with olive oil, sprinkling whatever seasonings I want on top (salt, pepper, BBQ spice, Lawry's, Italian Seasoning, or even cinnamon and splenda for a sweet treat, whatever you feel like), slice it with a pizza cutter into "chip" sized triangles, and baking on a cookie sheet - 425 degrees for 8-10 minutes or until crisp.  I usually make a huge batch on Sundays for a week or two and they stay fresh and crispy in Ziplocs so great for a road trip.  Then, I make my dip with 0% Plain Greek Yogurt, splash of lemon juice, fresh cracked pepper, garlic salt & dried dill weed.  OMG it is SO good and lots of protein.  No guilt. Kids love it - especially the Cinnamon/Splenda ones! :)

You can turn last night's leftover proteins into yummy salads (not lettuce salads lol) that you can put in containers and easily eat with a plastic fork (chicken salad, tuna salad, shredded or ground beef taco salad, mix pork with BBQ sauce, etc) and I also eat those salads with soy crisps or the homemade chips listed above.

Of course, cold strawberries are always a kid fave - and they are a great fruit option (all berries are, actually - lowest in sugars and carbs. For you, you can even throw some in an individually-wrapped cottage cheese or plain greek yogurt with Splenda.

Since you have a cooler, there are many snack-size options! Hope that helps and enjoy your vacation to AZ!
