I am 2 years out and avoid refined sugars and refined carbs.
Bear in mind that many post ops find that rice and bread simply don't sit well post op.
Potato is a good option to have for eating out, but a sweet potato (without the sugar and crap) is a better option than a white potato.
For me, having a lot of carbs would be like opening Pandora's box. And I have seen many folks at my support group who opened the box and regret it. It's each person's choice, of course, but you are free to make the decision to avoid or minimize carbs for your own well being.
A book that might interest you is "Anatomy of a Food Addiction" by Anne Catherine. She describes in pretty straightforward language the biochemical reasons for our addictions to carbs and sugar - interesting reading.
